PhytosterolsPhytosterols, also known as plant sterols, are naturally occurring compounds found in all plants and are chemically related to cholesterol, which is found in animal tissue. More than 40 phytosterols have been identified, but sitosterol, campesterol, and stigmasterol are the most abundant. These three compounds comprise up to 98% of the total phytosterols. Vegetable oils are the richest source of phytosterols.
